St Patrick's Party Food Ideas + 2013 Recap

I've been looking around for festive appetizer and finger food ideas on Pinterest to make for a St Patrick's day party and stumbled across some cute ideas.

I love celebrating St. Patrick's day with friends. Last year we went to a friend's potluck-style
party so we ate all sorts of festive food and, of course, had way too many Irish car bombs. It was a fun night and the same friends are throwing another St Patty's party this weekend.

One of my friends recreated this Rainbow Fruit Tray with a Pot-O-Gold Rainbow and I thought it was such a cute idea for a St Patty's party.

Ham, Mushroom & Spinach Quiche


Ingredients: 
1 9" deep dish pie crust
4 eggs
3/4 cup heavy whipping cream
1/4 yellow onion
1 box frozen chopped spinach
1 cup shredded cheddar cheese
1/2 cup sliced canned mushrooms
1/2 cup ham, chopped
Salt & pepper to taste

What To Do:
Preheat oven to 400 degrees.

Beat eggs and mix all ingredients together in a large bowl and pour into the pie shell.


Place pie shell on cookie sheet. I doubled the above recipe to make two quiches. (The leftovers are also great for breakfast!).

Bake for about 25 minutes or until the top has turned golden brown.

Let cool for a few minutes and enjoy!

Weekend Whereabouts, Pain Aside

I had another relaxing weekend spent in and around town. My mouth is still hurting badly from the surgery so need to see the Dentist this week to find out what's going on. It's been over a week and I still can't eat anything other than soft foods and I feel like I have a permanent headache. It's been torture!

On Friday, I found myself at Target on my lunch break and walked away with some cute stuff for the warmer days ahead. Has anyone ever left Target without buying something? It's ridiculous! The BCBG sandals are from Marshall's...another impulse purchase, but hey, they're pretty and were less than $20!

On Friday evening I went to a charity event that my company sponsored so K and I got to enjoy an evening of wine, hors devours, and live music on the lake. We also did some silent auctions to win tickets to Sea World, Universal Studios & some big concerts coming up.

On Saturday morning I went to the gym and picked up all the ingredients to start a 2-day juice cleanse this week. My fridge was bursting at the seams (err doors?) with fruits and veggies. I'll do a review and share the recipes once I'm done with the cleanse.

Saturday night I baked a quiche (recipe will be posted tomorrow) and tried out the new Pecan Pie Pinnacle vodka for "dessert". We love trying all the new flavors of vodka that Pinnacle comes out with.

On Sunday I spent almost 5 hours juicing and bottling 6 different types of juices for the cleanse so that got in the way of any plans I had to enjoy the sunshine outside. I had no clue it would take that long!

On Sunday evening we tried out some Cherry Wheat beer (which I didn't like) and K grilled BBQ chicken for dinner.  Of course, I had to shred the chicken into a million pieces to eat but it was delish.

It's starting to get warm and sunny in Florida so I'm hoping to have more weekend outdoors after being cooped up for the last two weekends.

Fashion Friday: Statement Necklaces

Happy Friday lovelies! 

Any big plans for the weekend? I have a charity event tonight for work and hoping to get started on my master bedroom redecorating that I posted about yesterday. 

Other than purses and shoes, one of my favorite accessories are statement necklaces. They help to dress up any outfit and make a statement like the name implies. My collection has been growing recently but these are the top 5 that made it out the house recently.

Master Bedroom Design & Decorating

My latest project is to redecorate our master bedroom. The walls are stark white and we have the most basic furniture and bedding set. I want some "pop" in the room and the walls painted gray, which has been the plan since we bought our house 3 years ago. Gray is such a cozy and warm color for a bedroom.

I found a bedding set with the most beautiful colors & a peacock theme. I love emerald green, sapphire blue, and of course gray.

 I'm definitely no interior decorator but I think a gray shag rug, silver mirror/wall decor and sparkly throw pillow will pull it all together to give me the sparkle I love without making it too girly for the husband.

Living with the Travel Bug

I can't think of anything I love more than traveling. I love visiting new places, trying new food and exploring different cultures and scenery. Everything about traveling fascinates me and I especially love the feeling of finally getting to cross a new country or city off my bucket list. I try to do at least one big trip every year and a few small trips to different cities either by taking a road trip or quick flight. I've already planned our travel adventures for the first half of the year and hoping to add a few more places to the list.

June: Boca Raton, FL for an engagement party

And our biggest trip for the year...
We're heading to Punta Cana in the Dominican Republic for a friend's destination wedding this summer! We've been saving for months and months for this trip so I'm SO happy to finally have the hotel and flights confirmed and booked!

Their wedding happens to fall on the same weekend as our anniversary so it's a 2-in-1 vacation to celebrate with friends and then stay on an extra day to do our own celebration.

I've never been to the DR and the resort is an adults-only, all-inclusive resort that just opened 4 months ago so I'm beyond excited and counting down the days to be on vacation with friends in paradise!

K and I also want to book an excursion for our anniversary day. We're tossing some ideas around ~ maybe para-sailing, horseback riding, jet skiing, swimming with dolphins or a catamaran cruise.

Crockpot Turkey Fiesta Chili


I made this chili recipe recently and had leftovers to feed an army. It was super delicious and perfect for the cold weather. This recipe is super easy and requires little prep work, which is just my style.

Ingredients:
1 lb ground turkey
1 can red kidney beans
1 can black beans
1 can spicy chili beans
1 large can diced tomatoes
I packet Chili seasoning
1 red pepper, diced
1 medium onion, diced
3-4 garlic pegs, diced
1 1/2 cups frozen kernel corn
1/2 cup chicken broth
Salt & pepper to taste

What To Do:
Brown turkey in skillet over medium heat with garlic until no longer pink. Add turkey to your slow cooker. 

Add red pepper and onion to skillet and saute for about 5 minutes. In the meantime, add the beans, corn, diced tomatoes and seasonings to the crock-pot and stir.

Add sauteed peppers and onions and pour in the chicken broth. 

Cover and cook on high for 4 hours.

Let cool a few minutes before serving. 

Serve with optional toppings such as shredded cheese or sour cream.

Enjoy!

Ice Cream & Painkillers + $100 Giveaway

Hope everyone had a fun/relaxing weekend!

I had a low key weekend after my wisdom teeth surgery on Friday so nothing super exciting to share and NOBODY wants to see selfies of my puffy cheeks. The highlight of Friday night was mint chocolate ice cream & catching up on some blogging.

K and I also watched the movie Adult Children of Divorce (A.C.O.D) from Redbox, which wasn't terrible. I think we've already drained the nearby Redbox of all the good movies available.  
On Saturday, my cabin fever had already kicked in and I had to get out the house for a couple hours. I went with K to get some errands done, chipmunk cheeks and all.

 Later that night I cooked Kate's delicious French Onion Soup recipe for dinner and painted my nails with Sally Hansen's Chrome nail polish.

Sunday was a beautiful day so I ventured into my backyard to get some sun. The pain & swelling in my mouth was quite bad so I didn't want to go in public but didn't want to be stuck inside.

Finally got to use my zero gravity lounge chair to catch some rays.

Cheers to a new week!

Losing Some Teeth But Hopefully No Wisdom

Oh hey girl! Right at this very moment, I'm getting my wisdom teeth yanked so I will be out of commission for the next few days. Today til Sunday will probably be spent on the couch with a bowl of mashed potatoes or preferably ice cream catching up on all my shows. Honey Boo Boo might also make the cut. I'll be planted on the couch for 3 straight days, that's 72 long hours!

My teeth were perfectly fine until I started approaching 30 and, out of friggin nowhere, my wisdom teeth decided to make an appearance so I'm hoping this solves the nagging pain in the back of my mouth.

On a brighter note...

I got some Sunshine in my life.
Sunday was an absolutely beautiful day so we finally got to enjoy outside and walk around our city.

It was the perfect day to have a mojito and enjoy the warmth...But then the weather quickly deteriorated to cold and rainy this week. *womp womp*

Also, Girl Scout cookies are the devil. Very delicious little devils that find their way into my office from coworkers' kids.

More planning this week for our New Orleans trip in April. So excited to experience the hype! We have our flights booked but still no luck finding a house for 8+ girls. The clock is ticking...need help!

Still lusting over my find from the outlet mall last weekeed. Such a pretty color for Spring & Summer.

Shopping Weaknesses

These are the things that usually drain my bank account although my shopping is on hold after our recent trip to the outlet mall and some bad decisions great finds made while drinking wine and shopping online at Kohls.com last weekend.  Those damn coupons never stop coming! Someone bought herself a new comforter set. Hopefully it's just as beautiful in person when it arrives this week.


If it was even remotely possible, I would own unlimited amounts of:

~ VS workout clothes and yoga pants
~ Pretty necklaces
~ Cute tops for work & going out
~ Girly iPhone cases
~ Watches: like this one from Kate Spade.

Wedding Planning Tips & Mistakes to Avoid

Planning a wedding can be chaotic. There are so many things to do and remember in the months leading up to your big day. Here's my advice from personal experience:

#1: How many invitations should you order? One of the biggest mistakes I made was ordering way too many invitations. So you're inviting 150 people? You don't need 150 invitations. Seems like a no-brainer but I've talked to a few other brides that made the same mistake! Remember you only need 1 invitation per household and households are usually 2+ guests.

#2: Create a list of must-take photos for your photographer: Many brides put effort and time into creating cute DIY wedding decor so make sure your photographer captures all the details as well as the Pinterest-inspired photos you love.

#3: Use an online wedding planning tool: I used Martha Stewart's wedding tools which was a lifesaver! I used these tools almost daily to make sure I was on track:
- Checklist: provides a weekly checklist with deadline dates and alarms if you happen to forget anything. 
- Budget Calculator & Planner: helps track & record all expenses and when payments are due. 
- Guest list tool: keeps track of your guests' addresses, RSVPs and the gifts you receive.
- Seating Chart: helps you map out where your guests will be seated. Print this out and give it to your venue and/or wedding coordinator. Example image below.
  

#4: Adults-only wedding: Make sure to specify it (discretely) on your wedding invitation or the envelope. I didn't specify it on our invites but tried to spread the word mainly to those with children. This failed miserably. While most of our guests were respectful and knew it was adults only, we did get a few RSVPs from our guests and 2+ kids. We ended up having toddlers and babies at our lakeside (alcohol-plenty) wedding.

#5: Create a hair & makeup schedule for your bridesmaids: Leave enough time for any delays and make sure to schedule the most amount of time for the bride. The bride should also typically go last so her hair and makeup are fresh for pictures and the ceremony.

#6: If your budget allows, hire a wedding coordinator for, at least, your rehearsal and wedding day: There are so many little things that need to be done on the day of the wedding & I don't know what I would have done without a coordinator.  They usually help coordinate the wedding party and priest/officiant on the rehearsal day and then coordinate all the vendors, decorating and setting up the floor plan on the wedding day. Along with greeting guests and making sure everything runs smoothly and on time. 

#7: Print out an itinerary for the guys: Let them know where they need to be & at what time for photos, etc. You won't have time to be calling around and sometimes guys get distracted when they get together (or they end up at the bar). Weddings and photography usually run on a tight schedule and you don't want a late groom.

Wedding Day Tips:

#8: Make sure to eat dinner: The bride and groom typically get seated first and served dinner. Take this opportunity to eat and chat with your new husband. I was too excited/distracted that I barely touched my plate. By the end of the night, I felt light headed from lack of food and drinking on an empty stomach. Make sure to eat enough to prolong your moves on the dance floor! ;-)

#9: Walk around from table to table and great your guests: Your guests should be still seated and eating by the time you're done with dinner, so make sure to spend a few minutes with each table. Every bride says that their wedding night just flies by in a wink of any eye and they never get to really spend time with all of their guests. This is the perfect time to mingle with your guests before the music gets turned up and the dancing begins.

#10: Don't sweat the small stuff on your wedding day. Enjoy the hours leading up to your wedding and just try to catch up with your favorite girls while you get dressed. Have a mimosa to calm your nerves. Mistakes do happen but think about the grand scheme of things. Is it really that big of a deal? Your your fiance still loves you and you're still going to get married!

We plan for months & even years for everything to go perfect. Well is life perfect? No. Do mistakes happen? Yes, all the time because we are only human. Remember mishaps or small hiccups just bring character to your wedding day and it will be something to laugh about when you look back.

Tuesday's Recipe Swap: Baked Pesto Salmon

I love this recipe because it's healthy and takes less than 20 minutes to prepare & cook so it's perfect for a weeknight dinner.

Ingredients:
1 lb. salmon (cut into 2 fillets)
2 tbsp pesto
1 tbsp minced garlic
1 tbsp olive oil

What to do:
Preheat oven to 350 degrees and spray Pam/cooking spray on baking sheet.

Rinse salmon under cold water and place on baking sheet. Mix olive oil, garlic and pesto in a small bowl. Use basting brush to coat salmon with pesto/garlic/oil mixture.

Bake 16-18 minutes.

I usually serve with steamed broccoli, asparagus, or a vegetable medley.

Weekend Happy Hour & Shopping Finds

Another relaxing and fun weekend spent in and around town. It seems like we're always traveling or celebrating a birthday/wedding/shower so I was happy not running on a schedule and just going with the flow this weekend.

Friday:
After work on Friday K and I headed out for happy hour & dinner at a local sports bar. We also got some free chicken tenders for being on their mailing list.
 
On the way home, we decided to rent a Redbox movie. Somehow, I got K to agree to watch the Anna Nicole movie. I've always been intrigued with her life and how it eerily matched and ended like Marilyn Monroe's life.

Saturday:
K and I ventured out to the outlet malls (which was a negotiation in itself to get him to come with me). He made out with a new pair for shoes for work and I found a pretty Kate Spade wallet. Both being about 50% off retail price.

We stopped at the Ale house on the way home for a late lunch and a pitcher of beer. Marriage takes negotiation: "you come to the mall with me, I'll stop and have some beer at the bar with you after"
Fair game.

 I also kinda splurged on a new purse at the outlets. My excuse being that my current purse got chewed up by our friend's puppy and no longer has a zip. Once again, much cheaper at the outlet compared to the stores in the mall.

Sunday:
We cooked brunch at home before heading out to meet up with some friends downtown.

The weather was perfect on Sunday so it was a great day to be outside. We walked around the lake downtown, stopped at a few bars for drinks, played ping pong and may or may not have had fireball shots.
