Crockpot Turkey Fiesta Chili

I made this chili recipe recently and had leftovers to feed an army. It was super delicious and perfect for the cold weather. This recipe is super easy and requires little prep work, which is just my style.

Ingredients:
1 lb ground turkey
1 can red kidney beans
1 can black beans
1 can spicy chili beans
1 large can diced tomatoes
I packet Chili seasoning
1 red pepper, diced
1 medium onion, diced
3-4 garlic pegs, diced
1 1/2 cups frozen kernel corn
1/2 cup chicken broth
Salt & pepper to taste

What To Do:
Brown turkey in skillet over medium heat with garlic until no longer pink. Add turkey to your slow cooker.

Add red pepper and onion to skillet and saute for about 5 minutes. In the meantime, add the beans, corn, diced tomatoes and seasonings to the crock-pot and stir.

Add sauteed peppers and onions and pour in the chicken broth.

Cover and cook on high for 4 hours.

Let cool a few minutes before serving.

Serve with optional toppings such as shredded cheese or sour cream.

Enjoy!

  1. You had me at crock pot!

We've been swapping out ground turkey for ground beef a lot lately (I used lean ground beef for the first time in a while in my sauce over the weekend) and don't even notice the difference. Such a healthy alternative :)
