Healthier Football Sunday Recipes


One of my favorite things about football season is the food that comes along with it although it can typically be high in grease and fat content. I wanted to find some slightly healthier (not deep fried) recipes to try this year for football Sundays and save the indulging for Super Bowl Sunday.















I made this recipe in the crockpot a couple Sundays ago and it was a hit! We also had lots of leftovers to take to work for lunch during the week.

Weekend with the Parents


This weekend was pretty busy with my parents in town and we also had our first taste of Fall weather which was perfect for some outdoor fun. On Friday night, K and I wanted to take my parents to somewhere new and different for them so we chose Izziban Korean BBQ and Sushi restaurant. They have a cold bar with different salads, seafood and sushi and then you pick different meats to cook on the grill in the middle of your table. It was a nice time catching up with them and we left overly satisfied and ready to crash.

 
On Saturday the four of us headed to Epcot's Food & Wine Festival. Unfortunately the lines were insanely long for most of the good food and drinks so we opted for the shorter lines and had some drinks in Norway, Canada and Africa.


We saw the Reflections of China movie which my parents really liked.


 And then listened to a really good band in the UK that played songs from Oasis and several other bands.



Since my mom's side of the family is Canadian, they enjoyed exploring Canada and of course had a drink there. If you follow me on Instagram (emilyalisonb), you might have seen my photo from the telephone booth in Canada. I guess they're not just a British thing!


Then we went to the Eat to Beat concert featuring Starship which was perfect for my parents since their music is from the 70's and 80's.



  Finally we settled for some dinner at Chefs de France which was amazing! We had some escargot as an appetizer and shared a bottle of red wine over our meals.



On Sunday, we headed to Wekiva Island. After my mom saw the pictures of our recent trip there with Kate and her husband, she wanted to go check it out for herself. We also took Lola along this time since we figured out it was a dog-friendly place. It was a nice Sunday afternoon relaxing by the river.

Weekly Roundup and Some Faves


This week has been draining so I'm excited Friday is finally here and I can get a little break. Although I'm not sure how much R&R I'll actually get since my parents arrive today and, like any visitors, they want to get out of the house and do stuff. At least I'll get a break from the damn alarm clock. 

Things I did this week:
~ went to lunch with my team at a favorite Korean restaurant.
~ completed a module or two of the online photography course every night. I've really been pounding them out over the weekend and in the evenings so I only have 3 more modules before becoming certified!
~ started planning out the details of our trip to Barbados and my friend's bachelorette while there. It's about time since we're heading there in 4 weeks and I can say we may or may not have a fun boat cruise planned.

~ ordered an iPhone case from Amazon for my new rose gold 6s phone only for it to arrive and then realize I accidentally purchased the 6s Plus size case. #Fail
~ stuck to our meal plan and cooked healthy dinners every night.
~ organized our house and the guest bedroom for our visitors. 
~ had the best cheat treat from Wawa. The pumpkin cheesecake smoothie is amazing!


So the week wasn't terrible but days without work is always needed. Now some random faves and joining Amanda for her Friday Favorites linkup.

I posted about some of my Fall Fashion Finds earlier this week which includes faux fur vests and I found these four beauties at Forever 21 for under $50.

One of my friends posted this joke on social media yesterday and it had me laughing on and off for 30 minutes straight. I don't even know why but I have the weirdest sense of humor.

Fall Fashion Finds

Even though it doesn't feel quite like Fall here it doesn't mean we can't start preparing our outfits for the cooler months ahead. The one thing I'm looking forward to is not breaking a sweat as soon as you step outside. My office feels like the Arctic tundra and then outside is hot and humid so it's hard to plan outfits for opposite conditions. I'm all about some booties, furry vests and, cute scarves this year along with some warmer colors for tops and skinny jeans/pants. I'll just be here twiddling my thumbs until we can bring them out to play.

What's your favorite Fall find or purchase?

Cheesy Artichoke Dip


I made this for a friend's housewarming party recently and loved how it turned out. 

Ingredients:
1 14 oz. can artichoke hearts
1 cup grated Romano cheese
1 block of cream cheese
1/2 cup shredded Mexican blend cheese
1/4 cup grated Parmesan cheese
2 cups light mayo
1 tsp Worcestershire
1 tbsp minced garlic
Black pepper to taste



What To Do:
Preheat oven to 350 degrees. Chop artichoke hearts.
In a large bowl, use hand mixer to blend cream cheese until softened. Add mayonnaise and mix for 30 seconds. Add remainder of ingredients and mix well. Spoon into a baking dish and bake for 40 minutes.
Serve with crackers, tortilla chips, warm bread or pita chips.

Weekend Festivities


I hope everyone had a great weekend and is ready to tackle this week. My weekend was pretty busy although Friday was fairly uneventful. K and I just went out to a small Mexican restaurant close to home for some dinner and had a quiet night at home after that.


On Saturday we headed to Animal Kingdom to go on some rides and have lunch in "Africa". Our season passes were blacked out for summer so we're now able to make use of them again.


 We started off doing the Kilimanjaro Safari and got to see lots of animals and then had lunch in the Harambe Market. The food was so good!






After lunch we rode the Expedition Everest rollercoaster which left me shaking. I almost didn't go on it but sucked it up and the verdict is that I'm a big chicken. The older I get, the more I become terrified of rollercoasters.


  Last we saw the Festival of the Lion King show which was surprisingly really good and entertaining even though it's probably geared more towards children. K and I both agreed it was much better than the Cirque Du Soleil "O" Show that we saw in Las Vegas and paid a pretty penny to see.


After Disney, we headed to International Drive to meet up with some friends for a joint Bachelor/Bachelorette party. We started with dinner and drinks at Brick House Tavern across from the Orlando Eye and then ended the night at Tin Roof bar with some live music and dancing.






Sunday was all about relaxing and getting caught up with blogging and house cleaning before my parents arrive this week.

That Rose Gold Phone Though


Has Blogger ever deleted one of your scheduled posts? That's what happened to my post for today and it isn't the first time. I logged in to see my post from Thursday had an identical duplicate and my draft for Friday had mysteriously vanished so I'm trying this again and it's going to be short and random.

My plan for today is to hopefully snag the new rose gold iPhone 6s on my lunch break. I hope I'm able to get through in time and that it doesn't sell out before I get there. Wish me luck!


I've mentioned before that my roommate and great friend from college passed away a few years ago from cancer. Her birthday was this week so I celebrated it somberly remembering all the fun times we had and still trying to grasp, 3 years later, that she isn't here on earth. 


Before Lola, I hadn't owned a dog since my childhood days. My first dog Rosie, who was a small fluffy yet feisty Pomeranian, was pretty much murdered by my neighbors' two Rottweiler dogs and it was a heart breaking moment for a child to witness. I didn't feel the need to have another pet since then probably because of the fear of facing a similar situation. Now that we have Lola though, I've learned so much and can see the true love a dog has for their owner and vice versa. (Sorry for two sad stories in one post).


Has anyone shopped the Kate Spade 75% off sale yet? I might have to pick up one of their pretty iPhone cases if I get through with the new phone.
