Rocksbox #4 - Sparkle & Shine

Slate Chromium Crystal Necklace
This necklace is the definition of a statement necklace and I plan to use it for one of my holiday parties or NYE.

I added this necklace to my Rocksbox wishlist and sure enough received it in my next box. I wasn't 100% sure how it worked but creating a wishlist will definitely pay off for those who are signed up.

Urban Gem Black Clover Earrings
The stud earrings are very pretty but also quite practical so can be worn on any occasion. I love the black and gold colors too (Go Knights!).

Jules Smith Cage Arrow Bracelet in Silver
This bracelet is just my style. Practical but with a bit of sass and it can also be paired up well with my ever growing Alex & Ani collection.

I'm really impressed with my fourth set and considering keeping the statement necklace.

My Rocksbox also came with a pretty surprise that I get to keep - a dainty gold "shine" necklace that I've been wearing all week.

Pepper Jack Cheese & Corn Dip

I found this Sriracha Street Corn recipe on Pinterest and decided I needed to try it out since I love spicy dips.

Ingredients:
1 can of whole kernel corn
1 can of Fiesta Corn
1 4 oz can of Fire Roasted Green Chilies
2 cups shredded pepperjack cheese
1/2 cup mayonnaise
1/2 cup sour cream
1 jalapeno seeded and chopped
1/2 cup green onion chopped
1/2 cup cilantro chopped
1 1/2 teaspoon cumin
2 1/2 tablespoon Sriracha

What To Do:
1. Combine the mayonnaise, sour cream, corn, and green chilies. Stir until combined.

2. Add in the pepperjack cheese, green onion, cilantro, and jalapeno, sriracha and cumin. Mix well. You can add more or less based on taste.

3. Chill in the refrigerator for at least 15 minutes before serving.

Enjoy!

Weekending: Disney, Birthday & Wedding Fun

Hope everyone had a great weekend!

My weekend started on Thursday after work. K took me out for dinner and bought me a cute little cake to celebrate my 31st birthday.

Sorry for being MIA on Friday as I took the day off to go to Disney with the hubby and have a little staycation at a resort nearby.

We spent most of the day at Magic Kingdom and went on a few of the main rides and rollercoasters. I'm going to post more about our Disney trip later this week since it was a fun-filled adventure and I got tons of photos.

We ended that day at Epcot to explore all the different countries and try different drinks and food from around the world.

We had dinner at Morroco's Marrakesh restaurant which was amazing!

After dinner, we headed back to the hotel and enjoyed our nighttime balcony view of the resort before crashing.

On Saturday (my actual birthday) we explored the huge resort and had some poolside lunch before heading up to the hotel room to get dressed for our friend's wedding.

The wedding ceremony was outdoors in the garden and the weather was perfect to tie the knot.

We had some fun in the photobooth taking funny photos with friends but also got a nice shot of our group looking "normal".

On Sunday, we checked out of the hotel and went for lunch at Seadog Brewing Company. We've been wanting to check out this place for a while now and were pleasantly surprised to find out they have $2.50 mimosas and bloody mary's on the weekend.

I had an amazing birthday weekend filled with so many fun festivities. Thirty one is treating me really well so far!

How was your weekend?

Disney Bound + Friday Favorites

Happy Friday!

I took the day off of work today to head out for a long weekend staycation near to Disney. I know I just did a 1-night hotel staycation last weekend for my company's holiday party but we're back at it again to celebrate my birthday and a friend's wedding tomorrow. Being a December baby makes the holidays even more hectic around here!

Luckily our Disney passholder wristbands arrived just in time for our trip today.

On Wednesday I met up with Kate for lunch at a modern cafe. We seriously work like a minute away from each other so it was about time we caught up over some lunch.

Rocksbox sent me this beautiful shine necklace as a little gift along with my 4th Rocksbox, which I'll post about the new pieces next week or sometime soon.

Snuggles with Lola every night has definitely been a highlight of my week.

Christmas Decorating

It's the most wonderful time of the year and I've finally finished decorating for the holidays. We have a small fake Christmas tree which we've been using for the past few years so it's not nice and fluffy like the real ones nor does it have that nice tree smell but it's easy to maintain and will do for now. I hope to upgrade later on down the road.

Tree ornaments from our travels

I started off with very little Christmas decorations and have been trying to buy a few new pieces every year and also get ornaments as souvenirs from our travels. I bought the Mickey & Minnie tree ornament on our recent trip to Disney and I purchased new stockings since we now have a new addition to the family.
