I've been looking for new ways to get those healthy greens in and Pinterest is always to the rescue for some inspiration and adventure, so to speak. I recently started pinning different salad recipes since the two that I have on rotation are getting a little old.

Let's look at some delicious salads that are perfect for the warmer days ahead. The titles are clickable if you want to venture over to get the recipe.

If you happen to try any of these recipes please let me know your thoughts or feedback.

PS: I incorrectly announced on Friday that our Wanderlust Wednesday link up was tomorrow. It's not. The link up is actually next week Wednesday (April 13th). Can you say hot mess express over here or what! Sorry if I misguided anyone but I do hope you'll link up your favor wanderlust adventures or dream destinations next week.

10 Best Recipes from 2015

Over the years I've picked up the love of cooking new recipes. Sometimes I go to a restaurant and try something amazing and have to recreate it at home. I also get a peace of mind knowing what ingredients go into the meals that I eat and try to use less saturated fat, sodium, and other unhealthy ingredients when I can. I also use so many herbs and spices that salt is never added to my recipes and I prefer to use coconut oil and anti-oxidizing ingredients such as garlic to give my recipes flavor.

These are some of my favorite recipes that I made in 2015 and shared on the blog:

Easy Chicken Spring Salad

As a side note, I'm not so impressed my brand new Nikon DSLR took a dump on me while on vacation so I'm back to grainy photos until they return a working camera.

Now back to the point of this post... I love finding recipes that are easy to whip together because after working a long day, the last thing I want to do is spend any length of time in the kitchen. This recipe takes less than 10 minutes to prepare so it's perfect for a quick weeknight dinner.

1 5 oz. bag of Spring salad mix
1 bag of Perdue carved chicken breasts
2 tomatoes, sliced
1/4 cup sunflower seeds
1/4 cup crumbled goat cheese
Lite Balsamic Vinaigrette dressing

Serving size: 4

What To Do:
1. Cook chicken according to the directions on the package.
2. Toss all ingredients together with dressing and it's ready to serve.
3. Enjoy!
