Don't Waste The Easter Ham Bone

I've had this recipe post sitting in my drafts since Christmas which the last time I baked a ham and decided to wait to post it right before Easter which clearly didn't happen. SkinnyTaste beat me to the punch by posting their Pressure Cooker Split Pea Soup with Ham last week which is almost identical to my recipe (except their photos look much more appealing).

This is not a photogenic type of soup but it definitely is a delicious and hearty soup that allows you to make use of the leftover ham bone from Christmas or Easter.

Total Cook Time: 7 hours on high

Ingredients:
Ham bone with leftover meat
16 oz. dried split peas, rinsed well and drained
6 -7 cups low-sodium chicken broth
1 medium white onion, chopped
2 carrots, peeled and chopped
2 ribs celery, chopped
2 tbsp. minced garlic
1/3 cup chopped parsley
Ground pepper & salt, to taste
Cooking Spray or crockpot liner

The leftover ham bone usually still has a significant amount of meat that falls off the bone when you slow cook it into a soup. You can always improvise with store-bought cubed boneless ham.

What To Do:
1. Rinse peas under cold water and drain.
2. Use a crockpot liner or cooking spray to lightly coat inside of the crockpot.
3. Layer peas, carrots, celery, onions and minced garlic in the crockpot. Place the ham bone on top of ingredients pour chicken broth evenly in the crockpot (save some broth for later).
4. Cover and cook on high for 7 hours, stirring occasionally during cooking time.

5. About 6 hours into cooking, remove ham bone and place on a cutting board to tear/cut off all leftover ham. Discard the ham bone.
6. Add salt and black pepper to taste and mix well into the soup.
7. Use a wooden spoon to gently mash the peas, return pieces of ham to the crockpot and add more broth, if needed.

  5. I hate split pea but MFD loves it. I usually do a ham and bean soup or ham and corn. I have the bone from easter in my freezer at the shore.
