*New* Recipe Swap Linkup

Shepherd's Pie is on the menu today. I made this dish for the first time on Sunday and it came out A-mazing! I kind of impressed myself with this one (despite almost burning the cheese topping).

While I usually opt for quick & easy recipes, this one requires quite a bit of ingredients, however it's very easy to make and takes less than 45 minutes to prepare & cook.

Ingredients:
1 tbsp olive oil
1 lb lean ground beef
1 red pepper, diced
2 tomatoes, diced
1 onion, diced
4 cloves garlic, chopped
1 14 oz. can beef broth
2 tbsp Worcestershire sauce
1 tbsp Soy sauce
1 tbsp Curry powder
4 tbsp ketchup
1 16 oz. bag Frozen peas & carrots
2 tbsp Corn starch

Mashed potatoes:
4 medium potatoes, peeled & cut into squares
1/4 cup milk
2 tbsp butter
1/4 cup sour cream

Topping:
1/2 cup sharp cheddar cheese, shredded

Directions: 
Boil potatoes for about 15-20 minutes until softened. Drain the potatoes and add milk, butter, sour cream and black pepper to the potatoes. Mix ingredients and mash well until they are smooth and creamy.

 While the potatoes are boiling, pour olive oil in a separate pan and add garlic, onion, red pepper, tomatoes and ground beef.  Cook on medium heat until beef begins to brown. Add Worcestershire sauce and curry powder to the mixture.

Add beef broth along with ketchup and soy sauce to the mixture and bring to a boil.

In a small bowl, mix cornstarch with 1 tbsp water and then add to the mixture. Add frozen peas and carrots and cook until meat sauce has thickened.

Grease a baking dish and slowly pour meat mixture into the bottom of the dish. Spoon mashed potatoes over the top and use a spatula to spread evenly.

Sprinkle shredded cheddar cheese on the top.

Place in the oven on broil for 4 minutes or until cheese becomes golden brown.

 (I placed my dish to close to the top of the oven & also forgot to set the timer so the cheese browned much quicker than planned but thankfully it didn't actually burn. I recommend placing on the middle shelf). 


Let cool for 10 minutes and enjoy!

  6. I have never had Shepard's Pie but always hear about it and wondered what was in it. Looks great and not to hard to make. Yum!
