The options are endless but these seven caught my eye while browsing Pinterest and various recipe sites. Let me know if you have any other easy and healthy recipes perfect for a weeknight dinner.
I could eat just hummus for lunch, in fact I did yesterday with some red pepper strips!! Great recipe finds as always and I wish those lettuce wraps were on the menu tonight...maybe they will be, lol!!

ReplyDeleteWe definitely get tired of the same old recipes too, but sometimes they're just easier to make when you know exactly what you need to make dinner quickly. Those cashew chicken lettuce wraps sound so amazing! I'm practically drooling right now!
ReplyDeleteThese all look good!!!! I am especially interested in the cashew chicken, sweet potato coconut soup and the asian chili chicken. YUM! I get stuck in a rut with the same meals over and over sometimes too.
ReplyDeleteMMM those lettuce wraps look so good! As does the hummus, I just love hummus! I had zoodles with frozen turkey meatballs from trader joes and a jar of marinara sauce last night, quick, healthy and delish!

ReplyDeleteoh wow that soup looks amazing! i love soup, KC hates it. what a nutter. those shrimp fajitas look good too. and i will eat anything with portobello mushrooms! yum.
ReplyDeletei really struggle with easy/healthy dinners during the week. we do eat a lot of stir frys - normally chicken with rice or rice noodles, then pasta (not so healthy), tacos, fish and veggies.. i feel like we run out of meals super quick!
