Turkey & Veggie Stuffed Peppers (No Rice)


I was looking for a healthy/low-carb recipe for stuffed peppers and found this recipe from AllRecipes.com that replaces rice with a bunch of veggies and just tweaked it a bit. 

Ingredients:
4 green bell peppers, tops and insides removed
1 lb lean ground turkey
2 tbsp olive oil
1/2 yellow onion, chopped
1 cup sliced mushrooms
1 zucchini, chopped
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
2 cups fresh spinach
1 14.5 oz can diced tomatoes, drained
1 6 oz. can tomato paste
garlic powder to taste
Italian seasoning to taste
S&P to taste



What To Do:

1. Preheat oven to 350 degrees. 

2. Wrap each green bell pepper in foil and place on a baking sheet. Bake 20 minutes and then remove from oven.

3. In a skillet, cook the turkey with 1 tbsp olive oil on medium heat until no longer pink and set aside. 

4. Heat olive oil in the skillet and cook chopped onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the diced tomatoes and tomato paste and then season with Italian seasoning, garlic powder, salt and pepper.



5. Stuff the green peppers with the turkey mixture and wrap each pepper back in foil.

6. Return peppers to the oven and cook for an additional 20 minutes.

Weekending with the Parents

It was a fun weekend spending time with my parents but unfortunately my mom came down with fever so we had to cancel most of our plans and stay close to home.

On Friday, I went out with my work team for a team building day out of the office. We had lunch and then went to a new bowling alley. I'm awful at bowling to say the least so I just play to laugh at myself and be a good sport. Bowling has never been my forte.

We played a few rounds of bowling and then I left to meet up with my parents. We hung out at home for a bit then headed out for dinner at Carrabbas which never disappoints

On Saturday, I got a bunch of errands done and picked up the movie Squatters from Redbox. K also surprised me with all the ingredients to make dirty martinis so we finally cracked open the Chicago Absolut vodka we bought on our trip a few weeks ago. We spent Saturday night hanging out at home to keep an eye on my mom while she slept.

The movie was actually pretty good and I really enjoyed the storyline. It starts off slow but escalates quickly and turned out to be worth renting, compared to most Redbox movies these days.

On Sunday we took my parents for a drive around town and had lunch at the Cheesecake Factory.  The rest of the day was spent hanging out at home and getting things organized for the week. Glad my mom made it out the house for lunch but was back to bed as soon as we got home.

Back to work today and hoping my mom feels better as the days go by.

Friday's Fall Favorites

Happy Friday lovelies!

This week treated me well although it was pretty hectic at work training 3 new hires and trying to keep my head above water with my own work but I was mentally prepared for it and pulled through. The weekend is definitely always welcomed and I'm excited to have my parents in town visiting us for a couple weeks.

Soo...

My second Rocksbox arrived this week. The necklace they sent is so gorgeous and I can't wait to wear it out. The earrings are okay/nothing special and the bracelet is WTF? I did wear it to work once this week to "get my money's worth" but it's definitely not my style.

We tried out Abita's Pecan beer and it's a great flavor for Fall. Abita also make a strawberry beer which is my absolute favorite.

Fall Fashion Finds:
These comfy looking scarfs from Blue Avenue. It's not nearly cold enough here in Florida but I'm eying the grey one for the colder weather.

Dinners at home: BBQ jerk pork chops with stuffed peppers and a vegetable medley.

Loving these pumpkin cereal bars from Trader Joe's. I always go into this place to buy some cheap wine and a couple things and end up leaving with the most random things ever. The most recent trip left me with tons of pumpkin stuff including the ingredients for the pumpkin muffins I baked over the weekend and these cereal bars. They also had pumpkin ice cream but I managed to avoid that one.

Pumpkin Muffins with Cream Cheese Icing


Ok, so I didn't make the muffins or icing from scratch but I did come up with a great way to create pumpkin-flavored cream cheese icing and it was a hit!

Ingredients:
Trader Joe's Pumpkin bread & muffin mix
1/2 cup vegetable oil
1 cup water
2 eggs

Pumpkin Cream Cheese Icing:
1 container Pillsbury Cream Cheese icing
4 tbsp. pumpkin butter (from Trader Joe's)


What To Do:
1. Preheat oven to 400 degrees and grease muffin pan.
2. In a medium bowl, beat eggs and then add in water, vegetable oil and muffin mix. Mix well.
3. Pour batter into muffin pan filling each to about 2/3 full.
4. Bake 18 minutes and remove from oven to cool.


5. To prepare icing, mix together cream cheese icing with pumpkin butter. Wait until the muffins have cooled and then spoon about 1 tbsp of icing on top of each muffin.

Just What The Doctor Ordered

This weekend was the perfect break I needed to de-stress from a crazy week. I cancelled all big plans and decided to lay low, catch up on some sleep and get things done around the house before my parents come to visit on Friday for a couple weeks.

On Friday, K and I went to Texas Roadhouse for some dinner. This place is easily becoming one of my favorite spots for good BBQ and yummy drinks at a decent price. We also got a free appetizer for signing up to their mailing list.

After dinner we picked up a movie from Redbox and relaxed at home. We rented Mom's Night Out which wasn't exactly great but I was just happy to be home relaxing on the couch.

On Saturday morning, I went to get my hair done at my hairdresser's new salon. She has a love for zombies/vampires/voodoo so they new salon is decorated to suit. It's not your typical salon but I think her style is interesting and we always have a fun time chit chatting while I get my hair done. I got some low lights done to tone down the blonde for Fall and the colder months ahead. 

Later, I got a bunch of errands done and some retail therapy at Old Navy & Kohl's for some new work clothes.  My pumpkin-scented candles and sweet smelling goodies also arrived from Bath & Body Works.

I baked pumpkin muffins (recipe on the blog tomorrow). I love cooking but have never been particularly good at baking so decided to try my hand at it and they came out really good.

Saturday night pretty much resembled Friday night and was spent relaxing and watching movies from Redbox with some wine.

I watched The Other Woman which was actually pretty good considering the crappy selection at Redbox.
I finally got to sleep in on Sunday, which felt AMAZING and was everything I needed to re-energize for this week. I spent the day blogging, doing laundry and organizing stuff around the house for our visitors this week.

I also enjoyed some Elder Betty beer from Magic Hat on the patio to cap off the weekend while K was glued to the TV watching football. 

Baked chicken quesadillas were on the menu for dinner. I posted a recipe a couple weeks ago and they're quickly becoming a favorite go-to meal for us. 

It was the perfect weekend and just what the doctor ordered :-)

Not So Typical Friday


This week has drained every ounce of energy out of me so no fun Friday post today. Just a random vague post about a shitty week so I'm going to use this weekend to re-energize and regroup.
